ABSTRACT. Studying the nexus of culture, cuisine, and the environment, food historians and anthropologists insist that humans’ culture-produced eating practices have historically been key sites of ecological transformations. My project examines this nexus through the lens of artistic practices and investigates the interrelations of art, cuisine, and the environment amid crisis. I will scrutinize the pursuits of artists who work to redirect the human appetite to prevent it from jeopardizing the natural environment. Possible repair scenarios for converting energy-costly nutritional habits into more environment-friendly food ways will lie at the core of the project. What role can art play in this context?
