Initially preoccupied with core issues concerning food ethics and food aesthetics, the philosophy of food has expanded to encompass a wide-ranging stock of themes and debates linked to food production, consumption, and representation. The series welcomes original and cutting-edge contributions at home with well-defined philosophical sub-fields (such as epistemology and metaphysics, political philosophy, philosophy of science, philosophy of medicine and biology) as well as innovative inter and cross-disciplinary titles delving into pressing societal issues with a philosophical lens (for instance, food waste, climate change, and digital foods).

Link or description: An Epistemology for Food Waste: Interdisciplinary Perspectives is a research project addressing the moral and environmental urgency of food waste, which accounts for one-third of global food production (930 million tons annually) and ranks as a top greenhouse gas emitter. The project tackles the challenges of inconsistent definitions and the need for universal criteria by exploring food waste expertise, its moral dimensions, and its social-political implications. Bringing together 12 scholars from the Universities of Minho, Sassari, Milan, UCLA, and Lisbon, it aims to establish a robust epistemological framework for guiding effective reduction strategies.

FEATURED RECIPE

Every issue of Crumble is accompanied by a recipe suggested by a member of our network. In this issue we feature a recipe by Susan H. Gordon.

​

This recipe was my grandmother's (Berenice Carbo Daddario), included in the 1970 Congressional Club Cook Book  APPLE PIZZA  2 cups sifted flour I teaspoon salt ½2 cup rolled oats â…” cup shortening 5 to 6 tablespoons cold water  Filling: 1½ cups grated sharp cheese 5 unpared cooking apples, sliced ½ cup brown sugar ½ teaspoon cinnamon 1/4 cup margarine  Sift together flour and salt; stir in oats. Cut in shortening until mixture resembles coarse crumbs. Add water gradually mixing lightly with fork until pastry holds together. Roll to form a 16" circle. Cut around outside edge with pastry wheel. Place on large cookie sheet. Arrange filling: sprinkle grated cheese on pastry leaving 1" rim uncovered. Overlap apple slices in two circles having tips toward outer edge of pastry. Arrange more slices to fill in center. Combine sugar, flour and cinnamon and sprinkle over apples. Dot with margarine.
