Abstract. Food is changing, especially how we produce it will change under climate uncertainty. Cellular agriculture promises to remedy this. This project investigates a concept of food as technology as a way to complement existing conceptualisation of food. What new understanding of issues at stake do we gain by speaking of food as technology? Can this help us transform tradition? Bringing farmers and innovators on the same epistemic level via a design lens, this session investigates the normativity of traditional and novel foods.
